CHEF JOHN ASH'S FAVORITE SEAFOOD SPICE MIXTURE

4 teaspoons pure mild to medium chile powder, such as ancho or chimayo
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
2 teaspoons kosher or sea salt

Mix ingredients together and store in an air tight container if not using immediately.
