BAKING AND BROILING:
- Preheat broiler/oven to medium-high heat (450°F).
- Spray a broiling pan with nonstick cooking spray or line a baking sheet with aluminum foil and coat it with nonstick cooking spray.
- Rinse any ice glaze from frozen seafood portions under cold water; pat dry with a paper towel.
- Brush both sides of frozen fish with high oleic vegetable oils: olive, canola, peanut, grapeseed, soy or safflower. (Do not use butter, sunflower or corn oil as they will burn at high heat.)
- Place frozen seafood portions on the pan and broil 4 - 5 inches from the heating element for about 4 minutes.
- Season the fish with spices and continue cooking about 5 to 8 minutes more, until the fish is opaque throughout. Adjust cook time for smaller fillets.
For thick fillets, broil until the fish is browned, about 8 minutes. Season the seafood with spices, then turn off the broiler and set the oven to 375°F. Bake 5 to 8 minutes more, until the fish is opaque throughout.
